6.3.08 Roasted butternut squash

Gotta love squash season--it lasts all year!


  1. Sorry I didn't get back to you about the soup. The only thing I could think that people might add to it is peppers. But I don't like peppers. You could add ham, although that might make it too salty. Apple sauce might be good.

  2. Thanks, Rain! I ended up making it more like a chowder base with potatoes, corn, carrots, and celery added. Oh, and I added some cream too. It came out beautifully.
